Classic Mediterranean Cuisine spans a wide variety of cultures: Italian, Greek, Turkish, Eastern Mediterranean, North African, Spanish and French.

Many dishes can be found with similar names in close variations all along the Mediterranean Coast. Wine, bread/pasta, olive oil, tomatoes and a multitude of vegetables combined with fresh seafood, meat and cheeses. Reoccurring themes in a never-ending story.

This is why the Slow Food Movement was invented in Italy.

FRANCE & SPAIN

No place in the world is more closely connected to gourmet cooking and the synonym of “tradition” than France: Haute Cuisine and Nouvelle Cuisine, Georges Auguste Escoffier and Paul Bocuse.

The juxtaposition – “ultimate innovation” – happened right across the border in Spain in the early 1990s: Chef Ferran Adria is closely connected to what became Molecular Gastronomy. Traditional classic dishes deconstructed to create something new.

Both extremes were only possible by a wealth of traditional recipes. Simple, yet refined. The base of what we believe is some of the most succulent, simple food in the world.

This is the place where every municipality has their own sausage specialties. The birthplace of craft beer, long before this was a thing.

It’s the land of dumplings and knödel and the epitome of meat and potatoes. Roots run deep! Add Wiener Schnitzel, Züricher Geschnetzeltes and you have a perfect tongue twister, the birthplace of Gemütlichkeit!

Endless months of snow and ice in the alps brought us hearty dishes and cheese fondue. Century-old hunting traditions supply us with a wealth of recipes for our wild game, waterfowl and fishing passion. “O’gzapft is!” Prost!
